African Cuisine : How I Got About Preparing A Make Shift Vegetable Soup In London.
This Spinach vegetable soup is my version of the very popular Edika-ikong soup. For those of us living in London currently,it is very difficult to see fresh water leaf or pumpkin (ugwu)
leaf, therefore the best option I could get was the spinach leaves and I got them in abundance from my local Tesco store, after waiting in a long queue to get in and keeping away from everyone in the store, as much as they kept away from me, to appropriately maintain a physical/social distance. For anyone who thinks that you can not eat Edika-ikong soup in the UK without the necessary leaves , I have a solution for you. This actually turned out to be the best vegetable soup I have made till date and trust me when I say that I am a good critic. Delicious chunks of cow legs, turkey gizzards and other forms of protein, made this meal a real delight.
